Love to cook? I have two wonderful recipes from the Paradise Cove series. Enjoy!

The first recipe is perfect for company. It’s extra special and delicious.

Orange Pecan French Toast

Orange Pecan French Toast

Ingredients:

  • 12 slices French bread (1-inch-thick slices)
  • 1cup packed brown sugar
  • 1⁄3 cup butter, melted
  • 2 tablespoons light corn syrup
  • 1⁄3 cup chopped pecans
  • 1⁄2 cup nonfat milk
  • 1 teaspoon grated orange rind
  • 1 cup fresh orange juice
  • 3 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 large eggs
  • 3 large egg whites

Directions:

  1. Combine brown sugar, butter, and corn syrup; pour into the prepared baking dish.
  2. Sprinkle chopped pecans evenly over sugar mixture.
  3. In a bowl, combine milk, orange zest, granulated sugar, cinnamon, vanilla, whole eggs, and egg whites. Whip with a whisk until thoroughly combined.
  4. Arrange bread slices over pecans in dish. Pour egg mixture over bread.
  5. Cover and refrigerate for 1 hour or up to overnight.
  6. When ready to eat, preheat oven to 350°. Remove baking dish from refrigerator.
  7. Carefully turn bread slices over to absorb excess egg mixture.
  8. Let stand at room temperature while the oven preheats.
  9. Bake for 35 minutes or until lightly browned.

Classic Cuban-Style Picadillo

This is a classic Cuban picadillo recipe for ground beef that is typically eaten over white rice. It can also be used as a filling for tacos or empanadas. It’s delicious with fried ripe plantains.

Recipes

Prep: 10 mins – Cook: 20 mins – Total: 30 mins – Servings: 4

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • ½ green bell pepper, chopped
  • 1 clove garlic, minced, or more to taste
  • 1 pound lean ground beef
  • 1 (8 ounce) can tomato sauce
  • 6 large pitted green olives, quartered
  • ½ cup raisins
  • 1 tablespoon capers (optional)
  • 2 (1.41 ounce) packages Sazon seasoning (such as Goya®)
  • 1 tablespoon ground cumin
  • 1 teaspoon white sugar
  • salt to taste

Directions:

  1. Heat olive oil in a skillet over medium heat; cook and stir onion, bell pepper, and garlic, onion in the hot oil until softened, 5 to 7 minutes.
  2. Add ground beef into the skillet; cook and stir until crumbly and completely browned, 7 to 10 minutes.
  3. Stir tomato sauce, olives, raisins, capers, cumin, Sazon seasoning, sugar, and salt into the ground beef mixture.
  4. Cover the skillet, reduce heat to low, and cook until the mixture is heated through, 5 to 10 minutes.

Visiting An Old Friend by @PatriceWilton

I have moved around a lot in my life which makes it difficult to have an old friend. Started off in Vancouver, Canada, which I loved very much and always will. I was a flight attendant in my twenties and my favorite route was Vancouver to Hawaii and back. That became my second home.

Old Friend

I married later in life, at the age of thirty and my husband’s job took us to Toronto, Melbourne Australia then Sydney. Our final stop was England, where we spent three years before coming back to the United States.

We never had a chance to put down roots or develop longtime friendships. It was difficult for the children, but I adapted well, and enjoyed the new places, the people I met and the adventures I had.

Forever Friends

I have come to realize that the friends I made on this journey would always stay with me, but the communication would stop.

The real, true friends that you’ll never forget are the ones you meet as a child, and the tender years of growing up. I envy those who have had the chance to stay in one place and develop a long-time, forever friendship that will stand the test of time.

Yes, I do have a few, less than a handful of people from my past—the kind you don’t see in twenty years, but can start back where you left off.

I am now revisiting a family, an old friend, that I quit on years ago, but returned to in the last few months. My Paradise Cove friends, the family I created in the first of six books. It is wonderful to be back with my old friends, who are still as engaging and adventurous as they were eight years ago. The new book will be a novella, but it will have the same characters and mishaps as the previous stories with a new cast of characters as well.

In this series, three daughters and their mother own a small resort in the Florida Keys, and each evening they have a Happy Hour that is not to be missed.

Here is a recipe from one of the appetizers served at the resort. The delicious fried cheese SAGANAKI! Three ingredients and made in Ten Minutes!

Start with one of the traditional Greek cheeses — graviera, kefalograviera, or kefalotyri. They are a medium-hardness yellow cheese with a mild nutty flavor. An alternative would be thick slices of Monterey Jack or Provolone.

Now that you have your cheese you will need Flour and Olive Oil or butter.

Steps:

  1. Dip the cheese thoroughly under cold running water or in a bowl.
  2. Dredge the cheese in flour and shake off the excess.
  3. Warm the pan on a medium heat then add the olive oil. You can use a shallow pan or a deeper pan if you wish a thicker crust.
  4. If you wish to Flambe the Saganaki pour a little ouza or brandy over the dish, squeeze some lemon, and ignite with a lighter. OPA!
