Easy Tex-Mex Casserole

I serve this vegetarian Tex-Mex casserole (shown with a mixed salad) frequently. because it’s a favorite of my husband, and I can put it together in a snap. I usually make it with leftover white rice, but you can use brown rice as well. In fact, I usually save the extra rice from Chinese takeout to use in the dish. Because the casserole is cooked in the microwave, it’s a good choice when I’m pressed for time.

3 ½ to 4 cups cooked white rice
1 15 ½ oz can of dark red kidney beans or black beans, drained and rinsed well
2 cups shredded Mexican-style or mild Cheddar cheese, divided
3/4 cup reduced fat cottage cheese
1 4 oz can chopped green chilies, undrained
1 teaspoon chili powder
1 teaspoon ground cumin
6-7 drops hot sauce
1/4 teaspoon salt or to taste, optional

  1. In a 2 ½- quart microwave-safe casserole, mix together the rice and beans.
  2. Stir in 1 ½ cups of the shredded cheese along with the cottage cheese.
  3. Stir in the green chilies, chili powder, cumin, hot sauce, and salt, if using.
  4. Sprinkle the remaining shredded cheese over the top.
  5. Microwave, covered with the casserole top, for 12 minutes on full power, until heated through. If the microwave does not have a turntable, stop and turn the casserole several times during cooking. Check to see that the contents are heated through before serving.

Serve with a mixed salad. Casserole will keep in the refrigerator for two or three days, covered
