If you follow my posts you know by now that I am a sucker for fun facts and worldwide holidays. Today is Homemade Bread Day, and while I haven’t made bread in years, I did make this delicious Banana bread a couple of days ago. It counts, right? 😉
Here’s the recipe if you’d like to try it. I wish I could properly describe how delicious and flavored it is, and so easy to make!
- 4 eggs
- 70 grams melted butter (cooled off)
- 3 ripe bananas
- 150 grams sugar
- 100 grams flour
- 5 grams baking powder
- 100 grams crushed walnuts (almonds, or hazelnuts if you prefer)
- ½ spoon of cinnamon (you can leave this out if you don’t like cinnamon)
- vanilla extract
- a pinch of salt
You can also add chocolate chips if you like.
Mix the eggs with the sugar and salt for a few minutes until they double up in volume, then add the baking powder, cinnamon, vanilla, butter, flour, and walnuts. Mix some more, then add the crushed bananas.
Preheat oven, butter up a non-sticky dish, pour the cake mix (it will rise quite a bit, so make sure the dish is tall enough), and bake for around 45 minutes at 160 Celsius degrees (320 Fahrenheit). Test it with a toothpick from time to time. The cake is done when you insert the toothpick in the center area and the toothpick isn’t sticky anymore.
Now decorate with powdered sugar and enjoy!
Here is what’s left of mine, two days later. It doesn’t look glamorous, but it’s still incredibly tasty and soft, because I kept it covered with plastic food foil, and to bake I used a heat resistant glass dish.
I love food, and these past months I have cooked and baked quite a lot. I’m thinking my next book heroine will be a chef. 👩🍳
